Wagyu beef is prized for its flavor and texture. The word “Wagyu” literally means “Japanese Cow”. This breed of cattle is renowned for its marbled meat. The fat in Wagyu beef melts at a lower temperature than other kinds of meats, which makes it incredibly tender and easy to eat.

Wagyu Beef — Delicious and Healthy

The unique blend of flavor and tenderness of highly marbled Wagyu beef creates a memorable meal. It makes wagyu beef an attractive ingredient for gourmet cooks in a great restaurant. It is also healthy for you. The ratio of monounsaturated to saturated fat in Wagyuk was more prevalent than in the rest of the cattle. And saturated fats differ. 40 percent is stearic acid. Why is Wagyu so expensive?

Unlike many of our favorite suppliers, Wagyus has its own costs. Why does WagYu meat cost more than other meats? The reason may only be the time it takes to raise cows producing A5 wagyu. Unlike Americans, angus cattle are normally killed within 18 months and Wagyu breeds usually live for around 3 years. A few months ago Japanese cows were given more expensive food in order to maintain the impressive marbling A5 that Wagyu was famous for. But a lot of the price comes down to economic principles 101 as well.

The History of Wagyu

Some genetic separation was observed in the Wagyu genetic variant 35000 years ago. Modern Wagyu cattle result from the migration of indigenous Japanese cattle by importation of the same. This cross was initiated in 1868 following the Meiji restoration in that period. It was hoped the government would adopt Western food habits. During this period, brown cows from the UK were imported. In 1910, this breed of British, European and Asian was shut down from external gene infusion. Despite its differences conformational variations are larger within the Wagyu breed than in British and European breeds.

Australian Wagyu beef’s rise

Except in Japan, wagyu are found nowhere else than in America and Australia. But unlike Wagyu American cattle, the meat is crossbred. You get nothing but the ultra-fat A5 experience of Japanese beef. However it is more likely to be more marbling than cattle not crossed-bred in Wagyu. In other nations, Wagyus can cross breed with the angus, while Australia typically uses Holsteins which produce less meaty flavours than its Stateside counterpart. In New Zealand, a ranch raised Wagyu cattle in a way very different from those in Japan.

History of Wagyu in Japan

The Wagyu we are familiar with were first discovered during the Meiji Restoration beginning in 1868, when government introduced western influence into Japan. Among the influences was beef. Cattle from England, Continental Europe or Japan were exported and raised in Japan. Then three dominant strains of black wagyo emerged: Tajim, Fujiyoshi and Kedaka. It accounts for 80 % of Japan’s cattle, and the remaining red strains were produced by Kochi and Kumamoto.
